How to make a Healthy Chicken Wrap?

Nothing compares to a good Chicken Roll! 

Way back, when we were students of Cotton College, that Chicken Roll of Feeds, the most popular fast food joint of Guwahati at the time, beckoned us every afternoon. And we sneaked, sneaked out of our English periods. We stood around the tall bistro tables at Feeds, devoured those juicy spicy rolls along with devouring the juicy spicy gossips of the town. Ahh! Those were the days.

I moved to New York City much later. There, I saw something similar, something that reminded me of my home, of those Rolls in Guwahati. These were Rolls – New York Style!

Popularly called Chicken Wrap, New York Style, these rolls are mild in taste, equally flavourful with a hearty portion of veggies in it. Hope you enjoy making them at home. It will make a healthy and hearty meal. Enjoy!


Ingredients:

(Makes 2 large wraps or 4 smaller wraps)

2 chicken breasts or any meaty part of chicken with equivalent portion of chicken meat

2 flour tortilla or 2 thin flour parathas, fried lightly

Vegetable oil

1 tsp garlic paste

1 tsp ginger paste

2 leaves of romaine lettuce or any lettuce if romaine not available

1 medium red onion, cut in small pieces

2 small-medium fresh tomatoes, chopped into small pieces

Salt to taste

Black pepper, freshly ground

2 tsp vinegar

Ranch dressing, from any supermarket, add freshly ground black pepper to it


Cooking the chicken:

1. Boil water in a pan. Add salt and 2 tbsp vegetable oil. Add chicken pieces. Bring to boil and simmer until chicken is cooked.

2. Remove the boiled chicken from water. Cut into medium pieces. If chicken with bones used, then debone the chicken and then cut it into pieces.

3. In a frying pan, heat 2-3 tbsp oil. Add garlic and ginger paste. Fry.

4. Add pre boiled chicken pieces. Add salt to taste. Add 1 tsp Kashmiri mirch, 1 tsp freshly ground black pepper and 3 tsp vinegar. Stir and fry on all sides.


Making the wrap:

1. Lay open one fried paratha in a flat dish.

2. Line the paratha with a leaf of lettuce. Add the chopped onions, chopped tomatoes, chicken pieces, salt to taste. Line these ingredients in the middle of the paratha from one end to the other. Drizzle Ranch dressing mixed with freshly ground black pepper liberally.

3. Fold paratha from both sides.

4. Serve hot.
