Strawberry Cream Cheese Cake for Holiday Season
It’s that time of the year. It’s the Holiday Season. It’s fun and festive. We are getting ready to welcome the New Year. It’s the time for Plum Cakes and Candied Fruit Cakes, Snowman cookies and Ginger Bread House. Here’s a lovely cake you can make in your own home. It’s an easy fun recipe, yet bursting with Holiday flavour. Happy Holidays and Happy New Year to all!!
- 2 cups flour
- 1 cup vegetable oil
- 1 1/2 cup sugar
- 3 eggs, beaten
- 1 1/2 tsp baking powder
- 1-2 tbsp milk
- 2 oranges
For the filling:
- 15 fresh strawberries
- 2 tbsp sugar
- 16 oz Cream Cheese, plain
- 7-8 tbsp strawberry jam, seedless
Piping bag: Use store bought piping bag or make one at home using parchment paper or plastic bag. Make a cone and cut a tiny hole at the end for the cream cheese to come out.
Baking the Cake:
1 Preheat oven to 162 C or 325 F.
2 Take a 9 inch round cake pan. Grease the bottom and sides with oil. Dust bottom and sides of pan with flour, tap out any excess. Keep the pan ready and put it aside.
3 Sieve flour and baking powder together. Add oil and eggs to the flour mixture. Beat well with a hand mixer or a stand mixture or a spatula. Add sugar and beat well. Add milk a little at a time while beating.
4 Wash the oranges. Dry them with a paper towel. Use a zester to take out the orange zest. Add to the cake mixture. Fold the mixture with a spatula for the orange zest to blend in.
5 Pour the cake mixture in the cake pan. Bake for 50 mins to 1 hr. Oven temperatures might vary depending on oven brand, so baking time might vary slightly.
Making the filling:
1 Wash strawberries well, remove stem and wipe with a paper towel to remove water. Keep aside 5 strawberries for cream cheese. Slice the rest of them into thin slices. Put them in a bowl. Add 2 tbsp of sugar. Let the strawberries and sugar mixture sit for sometime.
2 Put the Cream Cheese in a deep bottom bowl or mixing bowl. Cream Cheese has to be in room temperature. Beat with a fork to make a smooth consistency.
3 Take remaining 5 strawberries and chop them into tiny pieces. Mix chopped strawberries into the cream cheese.
4 Keep strawberry jam ready in a bowl.
Layering the cake:
1 Remove cake from oven. Let cool in cooling rack. Slice slightly below the middle through the whole cake to make two halves.
2 Spread a thick layer of cream cheese on the cut surface of the lower half of the cake. Apply a layer of strawberry jam on top of the cream cheese layer. Remove strawberry slices from the sugar syrup. Add a layer of strawberry slices over the strawberry jam. Turn the top half of the cake upside down. Spread a thick layer of cream cheese on the inner cut side. Apply a layer of strawberry jam over the cream cheese. Place the top half of the cake on the layered bottom half.
3 Pipe the remaining cream cheese on top of the cake in a zigzag manner. Add a few dollops of strawberry jam as shown in picture.
